Thanksgiving Brunch with Made-In

Our kids have grown so much over the past year. Peyton and Charlotte now have preferences when it comes to breakfast. No longer are they satisfied with a bowl of cereal anymore, now they want a hot breakfast!
I think it all started when Peyton attended Mother’s Day Out and the teachers would have a special breakfast they referred to as a “Teddy Bear Breakfast.”
All of the children would bring their teddy bears and the teachers would make a huge spread for all the kids to enjoy.

This really set the bar high for breakfast at home, so now on the weekends the girls request a teddy bear breakfast and I know exactly what that means!

Their favorite thing is a breakfast casserole and it’s super easy to make.

I just chop up any veggies that we have in the fridge and toss it together with some eggs, cheese, sausage, and potatoes and put it in the oven for a little over an hour. It’s always a winner in our house and it’s my plan for Thanksgiving brunch to hold us over until Dinner.

I was so excited when Made-In sent me this beautiful oval gratin baking dish. Handcrafted in France, it’s the perfect bakeware for casseroles. I love that it has a natural non stick coating and can go straight from freezer to oven.

My favorite thing about this bakeware is that it is dishwasher and microwave safe.

Three Avocados

This season is different for our family in so many ways. Peyton is in first grade now and my youngest two attend Mother’s Day Out a few days out of the week. For a while they were all home and now it feels that life is returning to normal. Our schedules are getting a lot busier these days.

We’ve been attending church online since last December and during the spring we decided that it was time to start going in person. We have been spending a lot of time at church, helping with children’s ministry and attending small groups and events. Our time is so important and we know that God honors our decision to spend time doing his work and helping others.

I recently found out about an amazing organization that is founded on doing just that. Three Avocados is a non-profit that sources and sells coffee beans from the mountains in Uganda to help the people there gain access to clean drinking water. Clean water helps to keep kids, especially girls, in school. Children are often responsible for fetching water daily, typically hours away by foot. Access to clean water gives them this time back, which can be better spent getting an education.

I just love how the name “Three Avocados” came about. It is inspired by the generosity of an elderly widow in Uganda.

You see, in small villages in Uganda, food is more important than money. An offering was being taken up there and the widow gave something very valuable to her, three avocados. It really touched me to know that she had sacrificed something so valuable because that was her heart.

It really opened my eyes to what God is wanting from me. I could give money or things. But what he wants from me is my time. It looks different for everyone. I feel like this sactifice is the key to blessings in our life. For the widow, it was avocados. For me, it’s my time.

I’ve really enjoyed this coffee in the mornings and it feels great knowing that it supports a beautful mission to provide cleaing drinking water to indivduals in need.

Swimsuits for Summer

Texas has always had super hot summers, but lately it has been such a scorcher! To cool off, we have been taking the kids to the neighborhood pool.

Swimming at a public pool used to be an extremely stressful time for me. I used to wear a swimsuit and then a cover it up with a shirt and shorts to hide all of my flaws.

A few years ago, I decided I wasn’t going to do that anymore. Freedom from that way of thinking feels so good.

I was so excited when Meet Curve wanted to send a few pieces of swimwear for me to try out. I was truly amazed when I put them on. For the first time in my life, I tried on a 2 piece and didn’t hate it!

Today, I own 2 of them, both from Meet Curve and I can’t wait to wear them to the pool. My favorite part about these swimsuits are the super high waist, extra lining in the abdomen so they aren’t see through, and lots of abdominal support. I am also a huge fan of the compression they have as well. They hold everything in which I appreciate when I’m swimming with my girls. I have been using these swimsuits for over 3 months now and the quality is the same as the first day I received them. Truly a great product that I am absolutely loving.

My kids love that their mom gets into the water with them and has a great time. No more stressing, no more anxiety! I love that I can feel confident in these swimsuits.

Pantry Love

It’s been a while since I have updated anything here… Life is going 1000 miles a minute and some days it’s just hard to take a breather!

At the beginning of this year, I told myself that it was going to be a YES year! Everything that I have ever wanted to do (within financial reason of course) I was going to get accomplished. In February, I had Lasik surgery and in March, I had my eyebrows microbladed, earlier this month I colored my hair. Whew that’s a lot! But I intentionally wanted to do things that I have denied myself in the past because of mom-guilt or not wanting to focus on myself. That me is gone. Last years pandemic brought out the resilient me. The me that I wasn’t sure I could become because I was so fearful. I thank God for his grace and deliverance from that. It’s a lesson that I won’t forget. Ok back to what this post is alllll about!

One huge thing that I have wanted to do since we moved into our home, is organize our pantry! We are truly homebodies and we cook alot so having functionality in this space has made all the difference. I knew that doing it would be an investment that would be so worth it!

We have always just thrown everything in our pantry. Cans on one shelf, bags and dried goods on another, cereal at the top. At the beginning of this process, I slowly began adding items to my shopping cart at Target and Amazon and little by little purchasing the ones that I knew we would get the most use out of. I was also very cognizant of sales.

The large, medium, and small wooden top jars are from Target and I fell in love with them! I had them in my cart for a month hoping they would go on sale, but they never did. I had purchased a tall and slender set of jars from Amazon and realized that they were not going to be functional for me. I wasn’t able to place my scoop into them. I like to measure out my flour and oats so they were an obvious no for me. I decided that I would just bite the bullet and purchase the jars from target and they have not dissapointed. We love them.

I did some research on labels. I found so many great customizable options on Etsy that were a little pricey. I sat down and wrote out all of the items I would need to label and ultimately, I went with a set I found on Amazon for a great price that included most of the items in my pantry. I am missing a label for pancake mix. But I think we’ll manage not having a label on that one!

These turntables have made grabbing items so convenient! They are literally everywhere. Lowes, Home Depot, Target. You name it. Kitchen organzation is not complete without one! I love the high sides on the clear turntable, it makes storing jars and heavier items easier.

The girls are becoming a lot more independant, so I wanted to have ease of access with a few bins. I planned to keep fruit in one of these, but it always seems to qo so quickly! I love these small and large wooden bins from Target. They are very light and can be stacked. The large clear bins beside them are from the container store and I love how sturdy and clear they are.

Ok. So remember that poor pancake label? It’s pretty obvious which one it is! Overall, I love these containers from amazon, especially because it allows us to be aware of how much goldfish and cheerios we have. These two items are absolutely necessary in our house.

We eat potatoes at least once a week. For some reason, I have always kept them on the floor of the pantry but I felt like they needed a space of their own. Enter this beautiful basket from The Container Store. I love the basket design and ease of access.

My favorite thing about the pantry are these clear bins I originally found on Amazon. On one of my frequent visits to Home Goods, I noticed the exact same bin that I had purchased from Amazon, for $4 cheaper! The clear design makes it so simple to store items visibly. I also found these dry-erase labels at Target on clearance and they clip so easily to these bins. Absolute win! Sadly, they are sold out! But I did link another option here.

I honestly saved the best for last… I have searched high and low for these Water Hyacinth Baskets. They are almost always $17 and up each when I have seen them At Home stores or Target.

One day, I walked into Lowe’s looking for spray paint. I just decided to check out home organzation to browse around. I literally stumbled on a box of these that hadn’t even been put out yet. But they are not what I thought they would be! These babies are collapsible! They literally fold up when you are not using them…but the best part? They were only $13! I couldn’t believe it! I love how sturdy and beautiful they are.

The last and final stop on this journey was definitely figuring out how I was going to organize that bottom space. Peter has so many large protein jars, there’s oil containers for fish frys and together we love to hoard plastic bags for various uses. I found some huge water hyacinth baskets at Home Goods and it has made all the difference.

Every time I open the pantry now, it brings me an immense amount of joy! I know that as a family, cooking, baking and snacking are a lot more enjoyable because of it. Oh and remember that piece of wood that was nailed down the middle? Peter tore it out and added brackets for support. I love the openness now and overall how it is so functional for us all.

Every photo has a story to tell

Peter and I celebrated our 9 year anniversary last week. When they say that time flies by, they couldn’t be more accurate. I remember going on my first date with Peter like it was yesterday. I remember the day we got engaged and the exact spot I said yes. I also remember the years we spent in college, working, studying, and looking forward to the day when it was all behind us. Things certainly were a lot simpler back then.

Over the years, we’ve gained 3 new family members and it has been one wild ride. I wouldn’t change it for the world. Now instead of late night study sessions, it’s late night cuddles from a toddler that can’t sleep. And that happens quite often these days!

When it comes to gift giving between us, I almost always know what to get Peter. He loves thoughtful gifts. Especially things that take time to create. It’s the best thing to him. So it was a no brainer to create a photobook filled with all of the wonderful memores we’ve made and he loved it. I used Mimeo Photos to customize a photobook and added a few special pages with our wedding date and graduation dates. I’m planning to hand it down to the kids when they’re older. The best part about the book is it’s well made design. I love that it is bound and has a beautifully, well-made, dust cover. When he opened it, I heard that classic crack of a new book and I realized how amazing this gift was for him.

It is such a wonderful addition to our home, a gift to reminisce about all the wonderful years we’ve had. And many more to come.
